Toma del Mottarone is an artisanal cheese typical of this mountainous Piedmont area, characterized by a semi-cooked paste and a thin straw-yellow rind. Produced with cow’s milk, it has a delicate and slightly aromatic flavour, which intensifies with maturation, which can vary from a few months to over a year. Its consistency is compact but soft, making it perfect to enjoy both fresh and seasoned. Excellent to combine with honey, jams or served on mixed platters, Toma del Mottarone represents a true gastronomic treasure of the area.
